Tofu Caesar Salad with Avocado and Broccoli

This year, I have gotten smarter with my quick meals!
When I am looking for something extra raw, packed with vegetables that support my Gut Health but still fuel me with sufficient healthy fats and protein, I turn to these quick and fun, easy Caesar salads!
I promise you will not be disappointed.
Tofu Caesar Salad with Avocado and Broccoli
300 g of Organic Firm Tofu
1 Whole Avocado
1 Medium-sized Tomato
2 Celery Stalks
2 Mini cucumbers
1 Broccoli Bunch
2 Stalks of Kale
3 Handfuls of Mixed Greens
1 stalk of Green onion
4 tbsp of Vegan Parmesan Cheese
3 cloves of Garlic
Juice of Half a lemon
2 tbsp of Olive Oil
4 tbsp of Nutritional yeast
Preheat the oven to 375 F.
Chop the Tofu into square pieces.
Add to a baking sheet or pan and place in the oven. Bake for 15-20 minutes until the Tofu is golden.
Meanwhile, chop the Broccoli into small pieces and some parts of the stem.
Coat in Avocado oil and Herbal seasoning.
Add to the tofu to bake for the last 5 minutes.
Prepare the Salad Mix.
Add the mixed greens and the washed massaged kale to a salad bowl.
Add chopped tomato, celery, cucumber, green onion, avocado, and three garlic cloves.
Emulsion Olive Oil and Lemon juice.
Add to the Salad, along with nutritional yeast and Vegan Parmesan.
When Broccoli and Tofu are finished, add them to the salad.
Toss and serve two people.
